That's why I never do buffets in restaurants. Things are seldom kept warm enough to stave off bacteria. That's if it's even cooked to the point of killing it in the first place. It's not foolproof to order from the menu, because, as we all know, fools are SO ingenious. But it's much more likely to be properly cooked and served hot.
